Ethiopia is one of the two countries in the world that never been colonized. Its geographical
location contributed to Ethiopian independence but it also helped it to maintain its unique
culture and heritage. Part of that heritage is the unique cooking system in Ethiopia . Mesob
restaurant aspires to keep that age old tradition alive and well in America .

The traditional way of cooking has been passed on from generation to generation. Mosob
restaurant carries that tradition with pride maintaining the old and updating new and fresh
ways from our time.

Mesob, the name of our restaurant comes from the name of our traditional dining table or
eating basket. It is practical and beautiful art form used in Ethiopia as dining table. Its round
shape is designed to allow people to sit in around the food to eat and to talk enjoying their
meal. As an Ethiopian saying goes “Family that eats together, stays together”.

    The traditional main meals of Ethiopia consist of two main parts.
    Injera (a large round, thin sponge like flat bread. It is made of
    Teff flour.Teff is an Ethiopian grain.) and Wot (a stew mainly
    made from beef or lamb cubes or a soup made from different
    types of beans). Many side dishes are served with main courses
    some of the side dishes are: Fresh salads, cheese and fresh
    vegetables.

To eat an Ethiopian food you tear off a piece of Injera and scoop some of the Wot and eat
it. Most Ethiopians eat with their right hand as it is customary to use ones right hand to do
every thing in Ethiopia . Our goal is to help you experience the wonderful Ethiopian cuisine
and hospitality right here in Colorado . All you have to do is bring your family and your
